Sarbisheh fylke (persisk شهرستان سربیشه) er eit fylke i Sør-Khorasan i Iran. Det administrative senteret i fylket er Sarbisheh. I folketeljinga i 2006 var innbyggjartalet i fylket 37 591.[1] Fylket består av dei to distrikta Sentral-distriktet og Mud-distriktet. Fylket har dei to byane Sarbisheh og Mud.
